The Perfect Pancakes

1 1/4 cup flour
shy 1/4 cup sugar
1 tsp baking powder
1 tsp baking soda
1/4 cup vegetable oil
1 egg
1 cup milk
1/4 cup plain yogurt
(or substitute 1 1/4 cup buttermilk* for milk and yogurt)
splash vanilla

Heat and butter griddle. Mix dry ingredients together in one bowl, then mix wet ingredients together in another bowl. Mix the dry into the wet ingredients; don’t over-mix – batter may be lumpy with occasional dry spot. Pour out large circles of batter on the griddle and flip when the tops “blister.” These are so good with chocolate chips and raspberries inside and maple syrup all over!
